31 Mar Vegetable Revolution: the new contest that puts Piana del Sele’s IGP arugula in the spotlight.
The vegetable revolution has been changing our way of eating in recent years. Ethics, sustainability, and health are central themes in the modern world, particularly in the realm of food. This trend is also being embraced by large industries, as new ingredients and techniques are gradually making their way into the homes of millions of consumers.
In this scenario, Piana del Sele’s Protected Geographical Indication (IGP) arugula has become one of the flagship products of the region, so much so that it can be described as “green gold.” Having received the prestigious IGP label in August 2020, this vegetable has transitioned from being a side dish to becoming the main protagonist on the table. Arugula, low in calories and rich in vitamin C, provitamin A, calcium, and vitamin K, is known for its beneficial antioxidant effects and its ability to counteract the harmful action of free radicals.
Piana del Sele’s IGP arugula takes center stage in “Vegetable Revolution,” a project conceived by 50 Top Italy in collaboration with Altamura OP, a producer organization specializing in fourth-range salad crops, including Piana del Sele’s IGP arugula, and the Dolce & Salato school in Maddaloni.
50 Top Italy, always supportive of young people entering this field, involved the young students from the Dolce & Salato school in a collective experimentation aimed at discovering the potential of Piana del Sele’s IGP arugula in the kitchen. They were asked to create a recipe (either sweet or savory), with Piana del Sele’s IGP arugula as the main protagonist.

Maritozzo con uvetta sultanina, rucola e crema di ricotta
Zeppoline di pasta cresciuta con rucola e riduzione agrodolce
Rigacuore con salmone fresco, rucola e scorzetta di limone
Gnocchi di patate con pesto di rucola e salsa alle noci
Frittata di bucatini, rucola e parmigiano
